How do you change the restore date(windows 7) beyond the last date shown (as Aug, 30, 2011)?

I would like to change my restore date to 30 August 2011.  I tried to set new date but when I put in the date to restore, it came up on todays date with my new date beside it.  I'm not computer savvy, so is there a step by step fix.
